This variety is intended solely for consumption as a table olive, since the oil content of the fruit is low. For the table, it is one of the olives with the highest commercial value thanks to its size and the high pulp-stone ratio. Gordal olives are eaten whole, seasoned or stuffed, and the approximate average weight of the fruit is 12 grams and its fat yield is 22%, so they constitute a very healthy appetizer due to their high nutritional content of vitamins and fiber.
